Cauliflower Cottage Pie

6-8 Servings | Prep 30 Mins | Cook 40 mins


500g Beef Mince

2 Carrots

Handful of parsley


1 tsp Extra Virgin Olive Oil

150ml Water

1 Cauliflower

60g feta cheese


1 – Pre heat oven to 180C/160C Fan

2 – Brown mince over a medium heat then peel and chop carrots and add to the pan

3 – Finely chop parsley, add it to the pan along with 100ml water, cover and leave for 20 minutes

4 – Wash cauliflower and cut into florets – boil or steam until soft

5 – Grate 50g of feta, the softened cauliflower and 50ml of water into a blender and blend until texture resembles mash potato

6 – Add beef to an oven proof dish and top with the cauliflower mash, grate remaining 10g of feta over the top

7 – Bake in oven for 40 minutes
